Many items were scarce during the war because they were needed overseas. Rationed goods included gasoline, coffee, sugar, rubber, beef, cheese, butter, oils, canned food, and leather. By the end of the war, twenty different items were controlled by ration stamps. Popular items, such as gum, candy, soda, alcohol and cigarettes were extremely hard to find.

 
 

Ration Recipes

 
 

Meatless Meat Loaf

2 cups cold baked beans
2 cups bread crumbs
1 cup nuts
2 eggs
2 tablespoons melted butter
2 tablespoons green peppers
salt to taste

Mix well and shape as you would a meat loaf. Pour over it one can tomato pulp or soup and a little water. Bake 30 minutes in moderate oven. Baste frequently while baking.

Mock Chicken & Noodles

1 quart milk
4 tablespoons butter
1 1/2 cup noodles
5 hard cooked eggs

When milk has reached the boiling point add butter and noodles. Cook 20 minutes. Then add the eggs cut in halves, and salt and pepper to taste

Sugarless Chocolate Cookies

Cream 1cup shortening
3/4 cup strained honey
3/4 cup maple syrup
2 eggs beaten whole

Sift together & add to mixture:
2 1/2 cup flour
1 teaspoon salt
1 teaspoon soda

Add 1 cup chopped nuts & 12 oz. semi sweet chocolate pieces
Drop on greased cookie sheet & bake 350 degrees for 15-20 minutes
